ONE of the advantages of living in the Caribbean is the easy availability year round of a wide variety of fresh fruits - key ingredients in the tropical cocktails featured. Just add your favourite alcoholic beverage, some ice and enjoy.
Tropical Mango Smoothie
1/2 cup(s) pineapple juice,
chilled
1 cup(s) diced mango
1 banana, sliced
2 teaspoon(s) fresh lime juice
1/2 teaspoon(s) grated, peeled
fresh ginger
3 ice cubes
In blender, combine pineapple juice, mango, banana, lime juice, ginger, and ice and blend until mixture is smooth. Pour into 1 tall glass.
Tropical Spiced Tea
1 1/4 parts spiced rum
fill with iced tea
1 splash lemon juice
Highball glass
Build over ice and stir.
Passion Colada
2 cup(s) ice
1 cup(s) passion fruit juice
1/4 cup(s) cream of coconut
3 ounce(s) rum, optional
Combine ice, passion fruit juice, cream of coconut and rum, if using, in a blender and blend until smooth.
Planter’s Punch
3 ounce(s) dark rum
3 ounce(s) spiced rum
1 1/2 ounce(s) Grand Marnier
6 ounce(s) orange juice
6 ounce(s) pineapple juice
1 1/2 ounce(s) lime juice
1 1/2 ounce(s) simple syrup
4 dash(es) bitters
2 ounce(s) grenadine
1 orange wheel
Add in a pitcher dark rum, spiced rum, Grand Marnier, orange juice, pineapple juice, lime juice, simple syrup, bitters, and grenadine.
Pour into shaker and add ice. Shake and strain into an ice-filled highball glass. Garnish with orange wheel.
